How to Make Potato Gnocchi

A staple in Italian households and a specialty in restaurants, potato gnocchi are easy to make at home and inexpensive too.

  • 2 lbs. potatoes - cooked and peeled
  • 1 large egg
  • 1 cup all-purpose flour
1.  Boil the potatoes whole with the skins on, until fork tender. Peel when they are just cool enough to handle.

2.  Work the potatoes through a potato ricer into a large bowl.

3. Add the egg and gradually add flour, mixing lightly after each addition. As it thickens, you will have to mix with your hands.
Flour your work surface then take a handful of dough and roll it into a log, about 1/2” round.
Cut the log into 1” pieces. They look like little pillows.
Continue rolling and cutting the rest of the dough. You'll have about 100 gnocchi.

To Cook

Place the gnocchi into boiling water, when they rise to the top they're done. It only takes a few minutes.

I served mine topped with marinara sauce and diced tomatoes.  Try them with Alfredo sauce, cheese sauce or just toss with butter.  For a heartier meal add ground beef or Italian sausage to your sauce.
