The local supermarket had kale and russet potatoes on sale for a really good price, too good to pass up. I thought they would make a nice combination cooked together as a vegetable side dish, and I'll do that next time. In the mood for something spicy, I decided to add Italian sweet sausage to the mix and I'm glad I did. It was easy to prepare and a big hit!
- 1 lb. Italian sweet sausage (bulk not links)
- 1 lb. Russet potatoes, peeled and cut into chunks
- 1 bunch Kale
- 1 Tblsp. Olive oil
Heat the olive oil in a large skillet over medium heat. Add the potatoes in one layer until they get
lightly brown (about 5 minutes), then turn the potatoes and cook another 5 minutes.
While the potatoes are cooking, wash the kale and remove the stems by tearing them from the leaves.
Add sausage to the skillet breaking it up into bite size chunks as it cooks along with the potatoes. About 7 minutes.
Remove sausage and potatoes from skillet with a slotted spoon and place on serving platter. Lower the
heat slightly then add kale to the skillet. The kale will take only a few minutes to wilt down. Stir once or twice. Remove kale and add it to the potatoes and sausage. Mix well and serve hot.
Served as a side dish, this will accommodate 4 – 6 people although it's easy to change the quantities. It also is a nice accompaniment with breakfast.
You might have noticed I didn't add any spices. The spices from the Italian sausage permeate the entire dish and that's plenty for me. If you want to add more spice, it would be best to do it while the potatoes and sausage are cooking.
