Fried Rice - Just Like Takeout!



Fried rice made at home is just as good if not better than restaurant takeout, a lot cheaper too. It only takes a few minutes to put together. Make it with shrimp, beef, pork, chicken or vegetarian. But don't stop there, consider crab, lobster and ham.

Ingredients:

  • 1 egg beaten
  • 1 cup pork, cooked and cubed
  • 1 Tblsp. minced onion (not dried flakes)
  • 1/2 cup frozen peas and carrots
  • 3 cups cooked rice, COLD - See below for how to cook boiled rice
  • 1 Tblsp. soy sauce
  • 2 tsp. hoisin sauce
  • oil for frying - peanut, vegetable or canola


Heat about 2 tablespoons oil in a large frying pan.
Pour in beaten egg and let it cook for a few seconds to form a sheet, then move it to the side.

Add peas, carrots and onion to pan and saute for about 1 minute.
Add fully cooked pork to pan and mix all ingredients together. With a spatula break up the egg and mix it in with the other ingredients.

Important:  Rice must be cold before adding to frying pan

Add fully cooked cold rice to pan with soy sauce and hoisin sauce. Incorporate all ingredients. 


The soy sauce and hoisin will turn the rice to a nice golden brown color.

Boiled Rice 
Note: 1 cup uncooked rice yields 3 cups cooked
In a saucepan mix 2 cups cold water and 1 cup long grain rice
Add 1 tablespoon butter and a dash of salt
Cover with a tight-fitting lid. Bring to a boil then immediately reduce heat and simmer for 15 minutes, do not remove cover.
Remove from heat, let stand covered for 10 minutes. Rice should be fluffy.
Transfer to a bowl or container and place in refrigerator until thoroughly chilled.
This will make 6 servings (½ cup each)

  1. Really putting me in the mood for some special fried rice! I think I would definitely put some shrimp in as well. That might be tonight's tea sorted out!

    2. Just back from the shops. Got some nice spare rib pork chops which have been grilled and diced. Forgot to buy shrimp!!! Will put a little chicken in instead. What a dope!

  2. I have not tried adding butter to my boiled rice. Very interesting idea. I have to try that next time I boiled rice.
