Fried rice made at home is just as good if not better than restaurant takeout, a lot cheaper too. It only takes a few minutes to put together. Make it with shrimp, beef, pork, chicken or vegetarian. But don't stop there, consider crab, lobster and ham.
- 1 egg beaten
- 1 cup pork, cooked and cubed
- 1 Tblsp. minced onion (not dried flakes)
- 1/2 cup frozen peas and carrots
- 3 cups cooked rice, COLD - See below for how to cook boiled rice
- 1 Tblsp. soy sauce
- 2 tsp. hoisin sauce
- oil for frying - peanut, vegetable or canola
Heat about 2 tablespoons oil in a large frying pan.
Pour in beaten egg and let it cook for a few seconds to form a sheet, then move it to the side.
Add peas, carrots and onion to pan and saute for about 1 minute.
Add fully cooked pork to pan and mix all ingredients together. With a spatula break up the egg and mix it in with the other ingredients.
Important: Rice must be cold before adding to frying pan
Add fully cooked cold rice to pan with soy sauce and hoisin sauce. Incorporate all ingredients.
Note: 1 cup uncooked rice yields 3 cups cooked
In a saucepan mix 2 cups cold water and 1 cup long grain rice
Add 1 tablespoon butter and a dash of salt
Cover with a tight-fitting lid. Bring to a boil then immediately reduce heat and simmer for 15 minutes, do not remove cover.
Remove from heat, let stand covered for 10 minutes. Rice should be fluffy.
Transfer to a bowl or container and place in refrigerator until thoroughly chilled.
This will make 6 servings (½ cup each)
