Pasta Primavera sounds like it might be difficult to make or require exotic ingredients that are either expensive or hard to find. Not so. Primavera is the Italian word for spring, and spring is the season that gives us an abundance of vegetables. There are no rules in making Pasta Primavera (Spring Pasta). I like to use angel hair pasta because it's light and delicate, but you can use any pasta.
I don't have a specific recipe, I just use whatever vegetables look good at the market. Frozen veggies are just as good. In this dish I used:
- red bell pepper
- green beans
Cut the vegetables into bite sized pieces. If you're using frozen, that's already done for you. Cook until tender.
You'll also need:
- Angel Hair Pasta cooked according to directions on package. Drain.
- olive oil
- 1 clove garlic
Saute garlic in olive oil until tender and translucent, then discard garlic. (or you can eat it, it's good for you).
Combine all the vegetables with angel hair pasta, toss with garlic flavored olive oil. Serve hot with freshly grated parmesan cheese and garlic bread.
