Diner Meat Loaf

Go to any diner in the country and they all have Meat Loaf on the menu. It might even be the 'Blue Plate Special'. Every diner and their short-order cook has an original signature recipe for Meat Loaf with at least one secret ingredient. This is what Diner Meat Loaf tastes like to me.


  • 2 lbs. lean ground beef
  • 1 egg, beaten
  • 1 cup bread crumbs
  • 1/2 cup onion, chopped
  • 1/2 tsp. black pepper
  • 2 cloves garlic, minced
  • 1/2 tsp. cayenne
  • 1 tsp chili powder
  • 1/2 tsp. red pepper flakes
  • salt to taste
Preheat oven to 350ยบ
In a large bowl combine all ingredients and mix well to incorporate all ingredients into the meat.
Line a cookie sheet (the kind with sides) with parchment paper. In the center of the sheet, shape the meat into a rectangle about 3 inches high.
Bake 60-70 minutes. Let rest 10 minutes before slicing.
Serves 4 – 6.

For the sauce:

  • 1/2 cup catsup
  • 1 Tblsp. cumin
  • 1 tsp. Worcestershire sauce
  • 1 Tblsp. honey
  • 5 or 6 dashes hot sauce
Mix all ingredients in a small bowl.  Brush on meatloaf halfway through cook time.
