Crumb Buns

New Jersey is home to a few foods that can't be found anywhere else in the country. Italian Hot Dogs for one. French Fries with White Vinegar on the boardwalk is another, and Crumb Buns. Sure, coffee cakes and crumb cakes can be found in bakeries and supermarkets everywhere but, Crumb Buns are a New Jersey thing.






Ingredients:

For the cake:

Preheat oven to 325ยบ F.
Grease an 8 inch square baking pan or dish.
  • 6 Tblsp. butter, softened
  • 1/2 cup sugar
  • 3 eggs
  • 1 1/3 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. vanilla

In a medium bowl mix butter and sugar until fluffy. Add eggs one at a time, mixing briefly after each egg. Add flour, baking powder and vanilla. Mix until smooth. Pour batter into pan. Let it set at room temperature until you've made the topping. (That will only take a few minutes.)

For the topping:

  • 3/4 cup flour
  • 3/4 cup brown sugar
  • 1/2 tsp. baking soda
  • 8 Tblsp. cold butter
In a small bowl combine dry ingredients, mix to distribute. Cut in butter using 2 knives in opposite directions until butter is the size of peas. There will be large lumps of sugar, that's good.

Spoon the topping over batter then gently pat it down ever-so-slightly into the batter.
Bake 45 to 55 minutes or until toothpick inserted in center comes out clean and topping is lightly browned.
When cool, dust with powdered sugar.
