Lentils and mushrooms combined with a few other veggies, herbs and spices will make a tasty and healthful burger. I like them served on a plate with sliced tomato and onion, no bun for me. A side dish of macaroni salad or cole slaw completes the dish. Try it for a meatless meal.
- 1 cup cooked lentils, cooled Tip: 1/2 cup dry lentils equals 1 cup cooked
- 1 cup mushrooms, finely chopped
- 1/2 cup onion, finely chopped
- 1 Tblsp. soy sauce
- 1/2 cup walnuts, ground
- 3 Tblsp. bread crumbs
- 1/4 tsp. cayenne pepper
- oil for frying
In a medium bowl mix all ingredients together, except oil. I found it easiest to use my hands to thoroughly combine.
Shape into patties. You should get 4 regular size burgers or 6 sliders.
Heat oil in a large skillet over medium-high heat. Carefully place each pattie in skillet and cook until brown and crusty on one side then turn and cook on other side. About 2 to 3 minutes each side.
