Midday meal or early light dinner that is diabetic friendly! Salmon fillet with sauteed fresh baby spinach and pear wedges. It's heart healthy, energy boosting and just plain good for you.
- 6 to 8 oz. salmon fillet
- 1 tsp Pure Maple Syrup
- 1 tsp. Sweet Smoked Paprika
- 1 tsp. Dijon mustard
- salt and pepper to taste
In a small bowl combine maple syrup, paprika and mustard, salt and pepper.
Place salmon skin side down on broiler pan lined with foil. Brush mixture on salmon, spreading to cover completely.
Set broiler pan about 6 inches below heat source. Broil 8 to 10 minutes. Watch carefully so it doesn't burn. Use a spatula to lift from foil. Serve hot.
16 oz. fresh baby spinach, washed and patted dry.
1 clove garlic, smashed
1 tsp. olive oil
Saute spinach and garlic in olive oil until spinach is wilted. Remove garlic and serve hot.
8 oz. pear slices topped with freshly grated nutmeg.
