This Summery Cherry & Chicken Salad is so good you won't be able to stop eating it! Cherries were in season when I made this but any other time of year, dried cherries would be a good substitute. It's light and refreshing but more importantly it's diabetic friendly and heart healthy.
You can serve this Summery Cherry & Chicken Salad on a bed of lettuce with whole wheat crackers on the side.

- 1 skinless chicken breast, cooked and cut up. Refrigerate.
- 6 fresh tart cherries, pitted and halved
- 2 Tblsp. chopped walnuts
- 1 green onion, thinly sliced
- 2 Tblsp. non-fat plain yogurt (look for the kind without sugar or fructose)
Combine all ingredients, cover and refrigerate or serve immediately.
