Summery Cherry & Chicken Salad

chicken salad with cherries, yogurt and walnuts photo by candy dorsey

This Summery Cherry & Chicken Salad is so good you won't be able to stop eating it! Cherries were in season when I made this but any other time of year, dried cherries would be a good substitute. It's light and refreshing but more importantly it's diabetic friendly and heart healthy.
You can serve this Summery Cherry & Chicken Salad on a bed of lettuce with whole wheat crackers on the side.

Always consult your healthcare professional for your specific nutritional needs.

Serves 2:

  • 1 skinless chicken breast, cooked and cut up.  Refrigerate.
  • 6 fresh tart cherries, pitted and halved
  • 2 Tblsp. chopped walnuts
  • 1 green onion, thinly sliced
  • 2 Tblsp. non-fat plain yogurt (look for the kind without sugar or fructose)
Combine all ingredients, cover and refrigerate or serve immediately.

Enjoy!

    1. Thanks Thelma! I like using yogurt for summer salads in place of mayo, it's lighter.
